- 1 package ground Italian Sausage, mild
- 1 jar Cookwell & Company Roasted Red Pepper and Tomato Soup
- 1 container chopped Squash and Portobello Mushroom or Veggies of your choice
Saute Sausage in large pot until no longer pink
Add Vegetables and continue to saute for 7 minutes
Add Red Pepper and Tomato Soup and simmer for 15 to 20 minutes
Serve with crusty Artisan Bread
Looks perfect for this cold weather! I would add Merlot. Stay warm.

It is all about gray skies and puddles of water today. This is our winter Chef Emil. The local mountains are covered with snow. Perfect weather to sit by the fire and nosh this warming Italian Stew. It’s a wonderful recipe. True you have to do a little cooking, but isn’t that better than opening a can of Campbell’s soup.
Sounds like a perfect Winter day. I would love to look out at the mountains……….and RAIN….I have almost forgotten what that is!
My dear Emil. This winter we have had so much rain the horse paddock became a lake complete with a couple of dozen ducks using it as a hang-out. These are local ducks – you know – the ones that hang out at Starbucks instead of heading south for the winter. V.
